These works form part of our long‑term commitment to preserving The Shelbourne’s heritage while thoughtfully enhancing the experience we offer our guests.

Craft Cocktails in Your Room
Enjoy expertly mixed Craft Cocktails, now available in all suites and orderable via in-room dining from any other room. Each bottle serves two and includes a selection of classics and favourites including Whiskey Sour, Old Fashioned, Cosmo, Aviation, Raspberry Negroni and Tommy Margarita. Simply add ice and a garnish for the perfect serve.
Tommy Doherty Sausage Roll & Glass of Champagne
Indulge in a truly exclusive experience at No.27 Bar & Lounge, where you can enjoy a delectable Tommy Doherty Sausage Roll, perfectly paired with a glass of Laurent-Perrier La Cuvée NV Champagne, available only here for €40.

Sabrage Ritual
Choose a bottle of Champagne from The Shelbourne’s impressive menu and enjoy a demonstration of Sabrage, as the sommelier opens it by removing the cork and its glass collar with a single sweep of a ceremonial sabre. If you are brave enough, you can even try it yourself.
Classic Afternoon Tea
Feast your eyes on an array of impeccably dainty sandwiches, homemade scones with clotted cream and jams, and a wide tea and coffee offering, then sit back and enjoy Afternoon Tea in the Lord mayor’s Lounge. Reservation required.

Arguably the most distinguished aviator of his generation, Blair was probably best known at The Shelbourne as the husband of Dublin born Hollywood star, Maureen O’Hara. This, in spite of the fact that he not only landed the first seaplane at Foynes but also flew the last one out!
