Since joining the team in 2023, culinary virtuoso Hector Gutierrez is responsible for exceptional levels of gastronomic excellence across The Saddle Room, No. 27 Bar & Lounge, The Horseshoe Bar, 1824 Bar & The Terrace, while seamlessly generating new ideas and concepts for our guests.
An early passion for baking led Albin to part-time work at a bakery while in college in India. Joining Ritz Carlton Abu Dhabi in 2016, he transferred to Riyadh before joining The Shelbourne in December 2021, focusing on modern pastry and traditional desserts, along with chocolates and showpieces.
Garry’s culinary journey began with work experience at The Shelbourne where he fell in love with the hotel and dreamed of returning one day as Executive Chef. After qualifying, he honed his craft with positions in Le Gavroche, Le Petit Niece among others before fulfilling his dream and rejoining The Shelbourne in 2008 as Executive Chef.
Crafted with Irish whiskey cream syrup and topped with herbal sweet vermouth foam, and enhanced with Irish king oyster mushrooms, wild thyme, and rosemary, all infused using a sous vide technique, this unique cocktail is evocatively reminiscent of Guinness.
