
Maurice began his hospitality career at Mount Juliet, progressing to Assistant Restaurant Manager at the Michelin-starred Lady Helen Restaurant. He then held Restaurant Manager roles at Sheen Falls and Gregans Castle before joining The g Hotel and Spa as Food and Beverage Manager. After serving as Food and Beverage Operations Manager at The K Club, Maurice joined The Shelbourne team.
The Shelbourne is undergoing room renovations from June 2026 to May 2027 – some daytime noise may occur. The Spa, including the swimming pool, closes from 6th June 2026.
