Philip, originally from Dublin, had his first experience in fine dining in 2010 while working at Thornton’s Restaurant on St. Stephen’s Green. He then moved to England to expand his expertise, working under renowned chefs such as Sat Bains, Simon Rogan, and Gordon Ramsay. Driven by his passion for fine dining and culinary excellence, Philip joined the Shelbourne team in November 2022.
