
Maurice began his hospitality career at Mount Juliet, progressing to Assistant Restaurant Manager at the Michelin-starred Lady Helen Restaurant. He then held Restaurant Manager roles at Sheen Falls and Gregans Castle before joining The g Hotel and Spa as Food and Beverage Manager. After serving as Food and Beverage Operations Manager at The K Club, Maurice joined The Shelbourne team.
Room renovations will take place from June 2026 to May 2027. During this period, guests may experience some daytime noise as essential improvement work is carried out. Please note that the sauna and steam room will also be closed during this time. We appreciate your understanding and will do everything possible to ensure any disturbance is kept to a minimum.
